“Bee keeping is a true Lithuanian yoga. Here I am – swaying on a tyre swing, watching over a buzzing colony of bees making patterns in the air above the beehive. The hive is slowly filling with aromas from a nearby forest. I can tell the little workers are tempted by the scents of conifers, heath and wild raspberries.
Here comes Mindaugas – our beekeeper-astronomer. He always asks the bees first whether their honeycomb is ready. Oh, such politeness – present only in a true gentleman. They say bees can be kept by only the best mannered of humans.
Well, and then there leaves me-impatiently waving my wooden spoon, ready to dig into the most delicious honey – sorry!”
The Mindaugas Masaitis owned biodynamic apiary is found next to the forest where the bees gather their exquisite nectar. Due to its unique location, the honey is dark amber in colour and thick with notes of the mossy earth and her flavours. These notes create an unusual alchemy with fruity cacao sourced in the Sambirano Valley, to the northwest of Madagascar.
